Bells in house boutique brewery is a rare tasting experience, using the genuine, traditionally slow vat process, passed on from Australia’s beer making heritage.
Bells Hotel & Brewery is the oldest existing pub brewery in Melbourne, producing a unique range of premium craft beers, following the traditional full mash process.
Our award winning micro-brewery is a charming blend of the old and new worlds, with traditional equipment and processes working in conjunction with the latest in brewing technology.
Black Ban Bitter
MALT  - Majority of Australian pale malt with a small amount of crystal, to enhance colour and structure.
HOPS  –  Traditional English Style Hops. Fuggles being added at the start of the boil for bitterness and the aroma comes from the late addition of East Kent Goldings.
YEAST & FERMENTATION  - The wort was inoculated with English ale yeast, and fermented for 6 days at 160C.
THE BEER  - at 5.0 % Black Ban Bitter, is an English style bitter with a light golden hue. The nose is a blend of toffee and caramel with fruity esters leading to a rounded full palate, finishing with the smooth bitterness from the East Kent Goldings.
EATING  - Chicken Parma Or Mixed Grill
BILLY’S BOCK
Malt  - 100% Weyeiman – Bohemian pilsner, for a light fresh colour.
Hops  - Super pride hops were added for bittering at the start of the boil, with hensbrucker added for aroma at the end of the boil.
Yeast & Fermentation  - The fresh wort was inoculated with a lager yeast, fermentation was conducted at 170C and lasting for 5 days.
The Beer  - The Six Bell’s Billy’s Bock is strong, malty and full bodied. The palate is fresh and bright with a slight sweetness filling out the mid palate, leading to a clean crisp finish. 5.0% alcohol
Eating  - Thai Chicken Salad or Asian Fish
Hell’s Bells
Malt  - Australia pale lager malt comprises the major part of the grist with additions of specialty malts – wheat, Cara and dextrin which give extra subtleties.
Hops  - The Australian hop, Super Pride is used as the bittering hop early in the boil and the American hop, Amarillo is added late as an aroma hop
Yeast & Fermentation  - The wort was pitched with selected Munich lager yeast and fermented at a cool temperature over an extended period to build strength. Maturation occurred at zero degrees to smooth off the flavour and condition the beer to the right carbonation.
The Beer  - Bell’s Hells Bells is a rich, strong draught beer of 6%; its bright hue indicates a beer of great character and body. The Hops have provided a light citrus flavour and the emphatic bitterness refresh the palate; beer for savouring.
Eating  - Eye Fillet with Prawns, or the Seafood Plate.
STOUT BILLY
Malt  - The grist is made of a rich dark blend of chocolate, English crystal and special de-husked roast barley.
Hops  - Super Pride of Ringwood was added early in the boil for bittering.
Yeast and Fermentation  - A warm fermentation was conducted at 230C over a 7-day period. Traditional ale yeast was used to start the fermentation. Following fermentation the beer was chilled to 20C and stored for a further 2 weeks before kegging.
The Beer  - Stout Billy is one of the blackest beers around with a colour of 340EBC. The aromas of coffee and dark chocolate are a direct result of the specialty malts. The palate is full rich and smooth, leading to a dark bitter chocolate finish.
Pop bells
Malt  - The majority of the grist was made up of Marris Otter an imported English pale malt with a 10% addition of Fawcett English crystal giving a distinct toffee character

Hops  -  Fuggles a traditional English hop were added at the start of the boil providing the distinct bitterness and a late addition of East Kent Goldings adding to the aroma

Yeast & Fermentation  - The wort was inoculated with a top fermenting English ale yeast.  The fermentation was conducted at 18°C over 6 days
The Beer  - Pop Bells has a distinct cloudy appearance due to the fact that it has not been filtered, a small amount of yeast remains, making this a “living beer”. The honey/toffee aroma on the nose is a direct result of the high quality imported malts.  The complex nose of this beer leads to a full malt driven palate finishing with the clear bitterness from the East Kent  Goldings. 5.2 % Alcohol
Eating -  Perfect with rack of lamb
