Hops  - The Australian hop, Super Pride is used as the bittering hop early in the boil and the American hop, Amarillo is added late as an aroma hop
Yeast & Fermentation  - The wort was pitched with selected Munich lager yeast and fermented at a cool temperature over an extended period to build strength. Maturation occurred at zero degrees to smooth off the flavour and condition the beer to the right carbonation.
The Beer  - Bell’s Hells Bells is a rich, strong draught beer of 6%; its bright hue indicates a beer of great character and body. The Hops have provided a light citrus flavour and the emphatic bitterness refresh the palate; beer for savouring.

Yeast and Fermentation  - A warm fermentation was conducted at 230C over a 7-day period. Traditional ale yeast was used to start the fermentation. Following fermentation the beer was chilled to 20C and stored for a further 2 weeks before kegging.
The Beer  - Stout Billy is one of the blackest beers around with a colour of 340EBC. The aromas of coffee and dark chocolate are a direct result of the specialty malts. The palate is full rich and smooth, leading to a dark bitter chocolate finish.
Pop bells
Malt  - The majority of the grist was made up of Marris Otter an imported English pale malt with a 10% addition of Fawcett English crystal giving a distinct toffee character
